Artichoke-Spinach Dip
Artichokes are a wonderful thing, especially when
you mix them with what else,CHEESE!! This
recipe uses whipped cream cheese, and feta, if
you want.
Take a hand full of Spinach, chop it up, and cook
it however you see fit.  I like to put it on low heat
with a little bit of artichoke vinaigrette in the pan.  
While that is cooking, chop the marinated
artichoke hearts into little chunks, pretty much to
the size you want it to be. After the Spinach is
cooked, go to town, play around with the
ingredients.  Mix the cream cheese, spinach,
artichoke pieces, garlic (I like it pureed), and
paprika, place in the refrigerator to cool, or top
with bread crumbs and bake.  Eat with fresh
French Bread.

Basil Pesto


Grab a mixer or blender, or whatever you use,
and blend all of the ingredients together, starting
with the basil (about 2 handfuls), 2 cloves of
regular size garlic, and the slice of sun dried
tomato, add a little olive oil to start it off.  Add in
the pine nuts and cheese.  As it is blending,
slowly add the olive oil into the mix until it is a
nice consistency, not too runny.  I like it when you
can grab a spoonful and it won't run off right
away.  If you want, add a little bit, not too much,
of the truffle oil.


Sun Dried Tomato Pesto


The process of making this is just like the Basil
Pesto, but might take a little longer because of
the tomatoes.

Natalie's Macaroni and Cheese


Place 1 stick of butter with some Parmesan and
garlic in a pot, mix and melt until it smells really
good:)  Start pasta in another pot.  Salt water if
desired.  Stir in can of Cream of Mushroom
soup, and 1 can of milk.  Mix out any lumps.  
Continue to stir on about medium-high heat, add
in chunks of cheese every once in a while,
continue to do this while pasta is cooking, and
until cheese is melted.  Add more Parmesan or
garlic until it is to where you like it.  Add sauteed
mushrooms.  Place in a large casserole dish.  
Put the can of French's Fried onions on the top,
and add some grated cheese on the top.  Bake
at around 375 until cheese is melted, and slightly
brown.  Enjoy!!!
